Lièvre à la royale, a monument of French cuisine

A dish that rewards patience, lièvre à la royale takes hours of preparation and a sauce thickened with blood, deep and fragrant. It is often credited to the court of Louis XIV. In fact, its most famous recipe was published by Senator Aristide Couteaux in the newspaper Le Temps, in November 1898. Few restaurants still serve it today: one more reason to visit Le Père Joseph this autumn.

For those who prefer feathered game, the mallard is grilled on the barbecue, as cooking over embers is one of the signatures of our kitchen.

Why November is the hunting month

On 3 November, France celebrates Saint Hubert, patron saint of hunters.

By autumn, game has fed on the fruits of the forest and mallards from the north arrive on our ponds.

In the days of Père Joseph, Richelieu’s “éminence grise” who died in Rueil in 1638, hunting was a royal passion: in 1623, Louis XIII had a hunting lodge built at Versailles. Our game menu carries on this tradition, just a short walk from the Parc du Cardinal.
